Our tea master reviews each leaf lot by hand. We cup every batch blind before it earns a place on the menu. Only 15% of samples make the cut.
Every gram matters. We weigh each portion on a precision scale to ensure the leaf-to-water ratio is exactly right for the vessel, the temperature, and the tea.
Water temperature is controlled to the degree. A delicate white tea gets 175F. A robust pu-erh gets 212F. We never guess, because five degrees changes everything.
